Jakks Pac-Man
If we make an article on the original Pac-Man plug and play by Jakks Pacific, the Pac-Man Wiki on Fandom has information sourced from the lead programmer for a lot of their Plug and Plays - https://pacman.fandom.com/wiki/Pac-Man_(Jakks_Pacific) - could be lots of great info there

Oddly it says that its design is "based on a Winbond TV encoder", lists the datasheet, and seems to imply that it is the CPU in some way?
The datasheet doesn't seem to imply there's anything happening regarding general processing, especially not anything that smells like 6502
